Journal-Day One: October 17, 2008 (199 lbs)

I’m up early this morning, looking forward to this journey that will change my life.  I fry two eggs in real butter and have an average piece of sausage.  I also have coffee with cream and a sugar substitute. I’m in heaven.

For lunch I had 4 ounces of tuna packed in water, a tablespoon of full fat mayo, dill pickles and lettuce.

For a mid morning snack I had poppers which are jalapeno peppers stuffed with cream cheese, wrapped in bacon and baked.  I found this recipe at a great website:  www.lowcarbfriends.com

For Dinner I had a steak fried in oil and green beans.

By day three I woke up with the worst headache I have ever experienced.  I later learned from quite a few people doing this sort of diet that the headaches during this period of time are usually associated with the body craving sugar.  Day three was also very hard because I desperately craved bread.  The only thing that gave me motivation to keep going was a 6 pound weight loss when I checked the scale that morning, I was hooked.

There were a few slip ups along the way, but not many, and the amazing benefit of being on the Atkins or any low carbohydrate diet is the appetite suppression.

Today I am 139 pounds, I have lost 60 pounds (38 of which are attributed to the Atkins Diet) and have never felt better.  Although I have added a modified amount of carbohydrates back into my diet, it was the Atkins Diet that gave me the motivation to believe that I could achieve my weight loss goals.  I am currently watching my calories and incorporate a 30 minute aerobic workout into my daily schedule.
